Jakhiya also called dog mustard or wild mustard is the seed of the Cleome viscosa plant used for tempering on culinary dishes. It is mostly grown between crops or in multi-cropping patterns in Uttarakhand and in the Terai regions of India and Nepal.
The Jakhiya seeds are small, dark brown or black in colour, and crackle on being heated in oil. They have a nutty aroma and pack a punch by adding a unique and crunchy flavor to the dish. Leaves of Jakhiya are also eaten as a substitute for green vegetables in villages.
